I love this recipe because of the gravy!

  • 3 lbs. pork tenderloin, organic
  • 1/2 c. water, purified
  • 1 med. apple, red, fresh, organic
  • 1 med. onion, sweet, organic
  • 1 tbs. coconut oil, raw, extra-virgin, organic
  • 1/2 c. chicken stock, organic, free-range
  • 1/4 c. vinegar, apple cider, organic, unfiltered, raw
  • 1 tsp. butter, unsalted, organic, raw or unpasteurized, grass-fed/pastured
  • sea salt, unrefined, & fresh ground pepper, organic to taste

Preheat oven to 350ºF. Heat a Dutch oven or oven proof skillet to medium high. Add coconut oil to the pan and let it melt. Season the roast with salt and pepper on all sides. When pan is heated, place the pork roast in the pan and sear to golden brown on all sides. Turn to medium low and add chopped onion and apples around the roast. Add the apple cider vinegar and water just about 1/3-1/2 way up the sides of the roast. Place in preheated oven covered for about 20 minutes. Then uncover for the last 20-30 minutes or until an instant read thermometer reads 145ºF for a medium center. Remove roast from pan and tent lightly with foil. Using an immersion blender, start to blend all the apples and onions in the pan to make the gravy. (If you do not have an immersion blender just blend in a regular blender... just be careful not to get burned!) Add some of the stock and blend until smooth and creamy, like a sauce or gravy. Add cold butter to finish the sauce (optional), and season with salt and pepper to your liking. Carve your pork roast to the thickness of your choice and serve topped with warm gravy.
