Delicious soup full of nutritious veggies!
Heat coconut oil in a medium pot over medium heat. Add chopped onions and sliced carrots. Saute until vegetables are tender, 5-8 minutes. Add thyme and minced garlic; saute for another minute. Add chicken broth, diced tomatoes, chopped chicken, and torn kale. Cover the pot and let simmer for 15 minutes.
