This quick healthy granola is perfect to top your Greek yogurt with, or your baked apples...Amazing as a snack or to eat as a cold cereal with almond milk. I love it!
Place the oats on a cooking sheet covered with parchment paper, roast for 10 mins in the oven at 325 degrees. Take them out and add the cranberries, nuts, and seeds. In a small bowl melt the coconut oil, and add the honey and vanilla, mix very well. Pour over the oat mixture making sure it is evenly coated and put back in the oven for another 15 minutes. Take the tray out, let the granola cool, and enjoy over Greek yogurt, baked apples, serve it as cereal with almond milk, or put it in baggies for your kids or yourself as a healthy snack. Soooo good! Enjoy! It yields about 12 servings.
