Raw Almond Vegetable Pate

Play around with the vegetables to suit your own taste. Including something juicy helps to thin out the consistency, but if you prefer to omit the tomato, just add a little water or extra lemon juice to the mix.


  • 1 c. almonds
  • 1/2 c. pumpkin seeds
  • 1 med. carrot
  • 1/2 c. broccoli
  • 1/2 med. red bell pepper
  • 1/2 med. tomato
  • 2 garlic
  • 1/2 c. cilantro, bunch, fresh, organic
  • 2 tbs. tahini
  • 1 tbs. lemon juice
  • sea salt & black pepper to taste


Soak almonds for 6-10 hours, and drain. Soak pumpkin seeds for 4-6 hours, and drain.

Combine almonds, pumpkin seeds, and carrots in a food processor and process until well ground.

Add the remaining ingredients and continue to process, stopping to scrape down the sides of the bowl occasionally, until a smooth paste forms. If needed for texture or taste, add more lemon juice, tahini, or water.

Scrape into a serving bowl and chill until ready to serve. Store in the fridge for up to 5 days. Enjoy!
