When I was a little girl, Dannon used to make a flavor called Dutch Apple - it was my absolute favorite. Here is my attempt at duplicating that memory; I am surprised at how easy and delicious it is. Enjoy!
Preheat oven to 350ºF
Heat coconut oil in a medium pan over medium to medium-high heat until melted. Add peeled and diced apples and saute, stirring occasionally, until soft and somewhat browned (about 6-8 minutes).
While apples are cooking, toss chopped walnuts on a foil-lined baking sheet. Place in oven and toast for 3-5 minutes (watch carefully so that they do not burn). Remove from oven and set aside.
After apples are soft and brown, keep the heat at medium and add water a few tablespoons at a time, mashing apples gently with a potato masher between additions, until a chunky, thick applesauce texture is achieved. Sprinkle with cinnamon, add stevia to taste, and stir to combine. Turn off heat.
In one half of a bowl, place 4 ounces of Greek yogurt. In other half, add warm apple mixture. Sprinkle everything with walnuts and enjoy! This can also be made ahead of time and assembled cold, but serving it warm makes it taste like a decadent dessert.
