A family favorite cookie tweaked to be BD friendly!
Preheat oven to 350ºF. Cream coconut oil, coconut sugar, and honey. Add eggs (at room temperature), then mashed banana. Sift almond flour, oat flour, baking soda, sea salt, nutmeg, and cinnamon. Mix dry ingredients into wet ingredients. Stir in oats and chocolate chips. Chill batter for 30 minutes in fridge or 15 minutes in freezer (to prevent spreading). Form batter into balls, arrange on baking sheet, and bake for 12-15 minutes or until golden brown. Makes 4 dozen cookies. One serving is 2 cookies.
