Sometimes the Italian side of me just really wants some pesto.
Slice zucchini in half, sprinkle with salt, and leave for 10 minutes - this will soften it.
Meanwhile, in a blender or food processor, process the brazil nuts until they become fine crumbs. Add the basil, coriander, parsley, lemon juice and salt, and process again. While the blade is turning, slowly drizzle the olive oil into the mix.
Taste for salt and lemon and adjust as needed.
Rinse the zucchini well under warm water to remove the salt. Spiralize the zucchini into zucchini "pasta." Gently toss the pesto, tomatoes and zucchini together and serve. Enjoy!
