Kathy's Chicken-Spinach Parmesan

Make your kitchen smell like an Italian restaurant with this yummy dish!

Ingredients

  • 1/3 c. green onion
  • 1/3 c. onion
  • 1/3 c. diced tomatoes, fresh
  • 1 c. tomato sauce
  • 1 c. white mushrooms
  • 2 tbs. coconut oil
  • 18 oz. chicken tenders, free-range, organic
  • 4 c. spinach
  • Italian seasoning to taste
  • 6 oz. parmesan cheese

Directions

Preheat the oven to 350ºF. Heat oil in a skillet over medium high heat. Add diced green onions, diced onions, diced tomatoes, and sliced mushrooms. Saute until transparent. Add tomato sauce, and heat through. Add Italian seasonings, and cook for an additional 2 minutes. Layer the following in a 9x11-inch baking dish: fresh spinach, chicken, tomato sauce with veggies, grated cheese. Bake in the oven for about 45 minutes or until chicken is cooked.
