A quick and easy recipe for a VERY good omelet!
Beat eggs with salt and pour into a small skillet coated with a very thin layer of coconut oil. Add finely chopped onion, torn spinach, mushrooms, cheese, and seasonings (I like to use curry, marjoram, and paprika, but you can use any you want!). Cook until done and turn over onto a plate.
