Margherita Chicken Skillet

A quick and easy dinner that tastes amazing!


  • 1 c. tomatoes, diced, canned, organic
  • 1/4 c. cheese, mozzarella, whole fat, raw, grass-fed or pastured, organic
  • 2 tbs. basil, fresh, organic
  • 2 chicken breast, skin-on, organic, free-range
  • 1/2 c. tomato sauce, organic
  • 2 clove garlic, fresh, organic


Pound chicken breast to about ½-inch thickness. Combine diced tomatoes, chopped mozzarella cheese, and finely chopped basil in a bowl. Divide mixture between the chicken breasts, and press into the chicken.

Combine tomato sauce and minced garlic in a large skillet over medium-high heat. Add chicken topped with tomato/mozzarella mixture. Bring the sauce to a boil, reduce heat to medium-low, cover, and cook for about 15 minutes, until the chicken is cooked through (no pink when cut into).
