Lemon Meringue Pie

Amazing Lemon Meringue Pie... what more needs to be said?


  • 1 c. lemon juice, pure, organic
  • 5 tsp. lemon zest, from fresh, organic lemons
  • 1/2 c. maple syrup, pure, organic
  • 1/2 c. coconut milk, unsweetened, full-fat, organic, canned
  • 4 tbs. arrowroot powder, organic
  • 5 egg, yolk, free-range or cage free, organic
  • 5 egg white, from large egg, cage-free, organic
  • 2 tbs. maple syrup, pure, organic


Preheat oven to 325°F.

Combine lemon juice, lemon zest, and maple syrup in a medium pan over low heat.

In a small bowl, combine coconut milk and arrowroot powder. Add to lemon juice mixture, stirring consistently until simmering.

Beat egg yolks together in a small bowl and add to simmering lemon mixture. Stir constantly for 3-4 minutes, or until mixture has thickened. Pour into a pie dish.

To make the meringue, beat the egg whites and maple syrup in a medium size mixing bowl until stiff peaks form.

Spoon the meringue on top of the lemon filling. Bake for 8-10 minutes, or until lightly browned.

Cool before serving. Enjoy!
