Great weekend breakfast.
Heat a lightly greased small (8′) nonstick skillet over medium heat.
Add chopped zucchini and onion to pan and cook for 2-3 minutes until slightly softened.
In a separate bowl, whisk the eggs and half of the cheese together until well mixed.
Add the black beans to the skillet. Add the egg and cheese mixture to the skillet.
Let the eggs sit in the pan for a few minutes until the bottom starts to set. At this time, take a spatula and work around the edges while tilting the pan to let extra egg mixture fill in the space around the pan. Cook for another few minutes and add the remaining shredded cheese on top.
Place under broiler for up to 5 minutes until cooked through and golden brown. Carefully remove pan from broiler using an oven mitt and serve warm. Enjoy!
