Onion Garlic Soup

Simple satisfying soup for a cold winter's day.


  • 1 tbs. butter, unsalted, organic, raw or unpasteurized, grass-fed/pastured
  • 1 head garlic, fresh, organic
  • 6 c. chicken broth, organic, free-range
  • 14 oz. tomatoes, diced, canned, organic
  • 1 onion, sweet, organic
  • 1/2 med. bell pepper, red, fresh, organic
  • chives, fresh, organic to taste
  • oregano, fresh, organic to taste
  • basil, fresh, organic to taste
  • sea salt, unrefined and pure to taste
  • black pepper, ground, organic to taste


Preheat oven to 400°F. Coat oven pan with butter. Add chopped garlic, roast for about 2 minutes.

Add all ingredients, including roasted garlic, to large stock pot. Bring to a boil, reduce heat, and simmer for 30-40 minutes.
