Don't waste those beet greens - incorporate them into your salad!
Rinse the beets and cut away all but an inch of the stalks (keep the greens for the next step!). Place beets in a deep pot with enough water to cover. Bring to a boil, reduce heat, and simmer until just tender. (Cooking time will vary depending on how big the beets are - start checking on them after about 20 minutes.) When you can poke a fork in beets easily, drain. Once they've cooled, peel off the skin using your fingers. Slice into rounds. Blanch the greens from those beets for 20-30 seconds in boiling water. Once you remove them from the water, rinse them in cold water to stop cooking. Squeeze out the excess water. Mix everything together, and drizzle Isabel's Famous Salad Dressing over it. Enjoy!
