Lemon Garlic Cod

Great for lunch or dinner.


  • 4 oz. cod, alaskan, wild-caught, organic
  • 2 garlic
  • 1/2 tbs. butter
  • 1 tsp. extra virgin olive oil
  • 2 tbs. lemon juice
  • sea salt & black pepper to taste
  • 2 tbs. fresh parsley


Preheat oven to 400°F. Place fish in a baking dish large enough to hold the fish in one layer. Season fish with a little sea salt and freshly ground black pepper. Place butter and olive oil in a small skillet. Heat on medium low. Mince the garlic. Add garlic and saute for 1 minute. Add the juice of 1 lemon and chopped parsley, then remove from heat. Drizzle garlic mixture over top of fish. Bake for 12-14 minutes until fish flakes easily with a fork.
