Arugula and Orange Salad

Salad with a citrus twist.


  • 2 c. arugula, fresh, organic
  • 2 c. baby spinach
  • 1/2 red onion
  • 1 med. orange
  • 2 tbs. dijon mustard
  • 1/4 c. orange juice
  • 1 tbs. white wine vinegar
  • 1/2 c. extra virgin olive oil
  • sea salt & black pepper to taste


In a large salad bowl, combine the arugula, spinach, thinly sliced red onion, and orange segments.

In a small bowl, whisk together the mustard, orange juice, and vinegar. While whisking, slowly drizzle in the oil. Whisk until emulsified and season with salt and pepper.
