Grandpa's Boiled Shrimp

My grandfather's boiled shrimp recipe - a holiday appetizer tradition!

Ingredients

  • 1 pinch sea salt, unrefined and pure
  • 4 lbs. shrimp, fresh, wild-caught
  • 1 lemon, fresh, organic
  • 1 tsp. peppercorns, black, organic
  • 2 bay leaf, organic
  • 2 spg. oregano, fresh, organic
  • 1 bch. parsley, fresh, organic
  • 3 celery stalk, fresh, organic

Directions

Carefully remove tails from shrimp. Put tails in an 8-quart stock pot and fill pot half way with cold water. Add a little sea salt and the peppercorns. Squeeze juice of one lemon into the water and put the squeezed lemon into the pot. Roughly chop celery and put in pot with any leaves from the celery stalk. Add oregano, parsley, and bay leaf. Bring to boil. Reduce to simmer for about 30 minutes. Return to boil and add shrimp. Stir gently and constantly. Remove shrimp when they become white and red and have curled (about 3 minutes).

To make a cocktail sauce: Whisk tomato paste, white or apple cider vinegar, lemon juice, salt, onion powder, horseradish, and raw honey. (Sorry for the lack of measurements, I just eye ball and taste as I go along)
