Tasty, easy chicken that you make on the cooktop
Use a skillet that has a cover. Heat the oil in the skillet and saute the sliced onion until browned. Lay the chicken on top of the cooked onion in the hot pan in one layer. Slice the lemon very thin, remove the seeds, and press the lemon slices into the top of the chicken--you want enough to cover the surface. Sprinkle with salt and pepper. Brown the chicken on one side. Then use a spatula to flip the chicken over--the lemon slices will now be on the bottom. Cover the skillet and cook on medium low until done--you will need to check the interior of the meat by cutting into it, especially if you are using large breasts. The moisture from the lemon and chicken will make a light sauce--if you want it less moist, cook a couple minutes more with the cover off to reduce the liquid. Serve the chicken with the lemon and onion mixture on top.
Notes: the cooking time will depend upon the thickness of the chicken. You can dress the recipe up with minced garlic sauteed with the onion, and/or fresh herbs such as dill, thyme, rosemary put on top of the chicken while it cooks. I do not count the onions as a carb because only a small amount is used for flavoring.
