Vegan walnut burgers with onion, celery, mushroms, potatoe, spelt, and oats.

  • 6 oz. walnuts, raw, organic
  • 1 c. onion, any type, organic
  • 2 c. celery, fresh, organic
  • 1 c. mushrooms, white, organic
  • 1 c. potatoes, white or gold, organic
  • 1/4 c. flour, spelt, whole-grain, organic
  • 2/3 c. oats, old fashioned rolled, dry, organic
  • 1 tsp. sea salt, unrefined and pure
  • 1/2 tsp. pepper, white, fresh ground, organic
  • 1 tbs. coconut oil, raw, extra-virgin, organic

We need: Food processor, blender, strainer, measuring cups, kitchen scale, skillet, turner, cooking fork, serving spoon.

1) Run walnuts a little bit in blender. Some chunks should remain. Put walnuts in bowl. 2) Cut potate, onion, celery, and mushrooms into large pieces and add the four to blender. Run until fine mush. 3) Grind the oats a little in a blender.. 4) Put veggie mush and walnuts into mixing bowl. Add salt, pepper, spelt flour, and ground oats and mix well by hand. 5) You can either fry the walnut burgers in the skillet right away or let the "dough" sit a little in the fridge to become more solid. 6) Use low heat and fry them 4 minutes on each side, no lid. You'll get 15 burgers. They are a bit tricky to fry. Good for my character development => cautiousness and patience :-)

I'm going to freeze these and serve them to a kosher/vegan guest who's coming for a big turkey party soon :-) These burgers are no problem to make if you can use eggs and cottage cheese, but then they wouldn't be vegan.
