Fruit Tartlets

I was looking for a yummy snack recipe and came across the recipe for Almond Crusted Pizza by Nicole. I decided to try adapt the recipe to make delicious fruit tartlets, perfect for a sugar-free, gluten-free mid-afternoon snack with a cup of red bush tea, and also ideal for a pretty dessert for a special occasion.

Ingredients

  • 1 c. almond flour, organic
  • 1 egg, omega-3, cage-free, organic
  • 1 tbs. coconut oil, raw, extra-virgin, organic
  • 1/4 tsp. vanilla extract, organic
  • 1/4 tsp. cinnamon, ground, organic
  • 4 oz. yogurt, greek, plain, full-fat, plain, organic
  • 1/2 tsp. vanilla extract, organic
  • 1 tsp. honey, raw, unfiltered, organic
  • 1/4 banana, fresh, organic
  • 1 kiwi, fresh, organic
  • 2 raspberries, fresh, organic

Directions

Preheat oven to 350°F (180°C).

Mix almond flour, egg, cinnamon, 1/4 teaspoon vanilla, and melted coconut oil until a sticky dough is obtained. Split into 2 balls. Place each ball on a disc of baking paper (parchment paper), place another disc of paper on top and push down with the hand to flatten. Remove the top layer of paper and put the pastry still on the paper in two tartlet cases. Prick the bottom of the pastry lightly with a fork.

Bake for 10 minutes. Leave to cool.

Mix together the Greek yogurt, 1/2 teaspoon vanilla, and honey. Spread half of this mixture on the bottom of each of the tartlets. Top with sliced banana and kiwi (and a raspberry in middle of each tartlet).
