Fried Chicken Thighs

A healthy approach to an old favorite, fried chicken!


  • 2 chicken thigh, skinless
  • 1 egg
  • 1/8 tsp. oregano, ground, organic
  • 1/8 tsp. white pepper
  • 1/8 tsp. turmeric
  • 1/8 tsp. sea salt
  • 2 tbs. spelt flour
  • 2 tbs. coconut oil


Rinse and pat dry the chicken thighs (about 4 ounces each), set aside. In a small container, mix the flour and all the seasonings, blend them well then pour into a flat bottom plate. It may seem like a lot of seasoning but don't be afraid, give it a try... it really does work out well. Whisk the egg until well blended in a separate flat bottom plate. Coat the chicken pieces in the egg THEN coat well with the flour mixture. In a heavy bottom pan, melt the oil and fry for 5 minutes with the pan COVERED, then turn and fry another 5 minutes with pan UNCOVERED.
