Amazing Flavor full of protein! These were a major hit in our house! serve with your favorite veggie side.

  • 2 lbs. beef flank steak, grass-fed or pastured, organic
  • 1/3 c. red wine vinaigrette, organic
  • 5 oz. bacon, Canadian, uncured, nitrate-free, organic, pastured
  • 1 shallots, fresh, organic
  • 4 oz. cheese, feta, raw, grass-fed or pastured, organic
  • 2 clove garlic, fresh, organic
  • 1 tsp. thyme, fresh, organic
  • 1/2 tsp. black pepper, ground, organic
  • 1/4 c. parsley, fresh, organic

Place steak in a large resealable bag, and pour red wine vinaigrette into bag. Seal and turn several times to coat. Marinate in fridge 10-30 minutes (or up to 6 hours if you wish), turning occasionally.

Soak 8 10-inch bamboo skewers in water. This will prevent burning later on.

Coarsely chop bacon and finely chop shallot. Combine bacon, shallot, crumbled feta cheese (I like to use tomato and basil feta cheese), minced garlic, and finely chopped thyme in a mixing bowl. Refrigerate until ready to use.

Heat grill to medium-high. Remove steak from marinade and discard leftover marinade. Place steak on a large cutting board with the grain running horizontally. Season with salt and pepper. Spread feta cheese mixture over steak to within 1/2 inch of edge. Tightly roll up jelly roll style.

Insert skewers spacing 1 1/2 inches to 2 inches apart along the seam of the steak roll to hold it together. Using a sawing motion, cut between each skewer to create 8 pinwheels (There should be the same amount of meat on each side of the skewer).

Place pinwheels on grid of grill. Grill covered 8-10 minutes, turning once.

Serve each pinwheel garnished with parsley and enjoy!
