Warm and satisfying topped with pure maple syrup, these make a delicious fall breakfast!

  • 1 egg, omega-3, cage-free, organic
  • 1 c. flour, brown rice, organic
  • 1 c. milk, full-fat, raw, grass-fed or pastured cows, organic
  • 2 tbs. coconut oil, raw, extra-virgin, organic
  • 1/2 c. pumpkin puree, 100% pure, canned, organic
  • 1 tbs. coconut sugar, organic
  • 1 tbs. baking powder, organic, gluten & aluminum-free
  • 1/4 tsp. sea salt, unrefined and pure
  • 1/4 tsp. nutmeg, organic
  • 1/4 tsp. cinnamon, ground, organic
  • 1 med. apple, red, fresh, organic
  • 1 tbs. butter, unsalted, organic, raw or unpasteurized, grass-fed/pastured
  • 1 tbs. coconut oil, raw, extra-virgin, organic
  • 1 tbs. maple syrup, pure, organic

Combine egg, flour, milk, melted coconut oil, pumpkin puree, coconut sugar, baking powder, sea salt, nutmeg, cinnamon, and apple (peeled, cored, and chopped) in a medium bowl. Stir to mix well.

Melt 1 teaspoon butter and 1 teaspoon coconut oil in a large pan over medium heat. Spoon batter by 1/3-cup portions into pan, making 3 or 4 pancakes at a time. Cook, turning once, until cooked through, 8 to 10 minutes. Serve with syrup and more butter, if you like. Repeat for remaining pancakes, using 1 teaspoon of butter and 1 teaspoon of coconut oil each time.

Each serving is 3 pancakes.
