Yummy side for chicken!!!

  • 3 c. broccoli, fresh, organic
  • 2 tbs. cottage cheese, full-fat, raw, grass-fed or pastured, organic
  • 1/4 c. cheese, parmesan, raw, organic
  • 2 egg, omega-3, cage-free, organic
  • 1/8 tsp. sea salt, unrefined and pure
  • black pepper, ground, organic to taste
  • 1/2 tsp. garlic powder, organic
  • 1/2 tsp. onion powder, organic
  • 3/4 c. cheese, mozzarella, whole fat, raw, grass-fed or pastured, organic

Preheat oven to 450ºF. Line 12 cups of a muffin tin with silicone muffin liners (or foil muffin liners). Grease muffin liners with olive oil or coconut oil.

Lightly steam the broccoli florets on stove top for 3-4 minutes. Chop florets into small pieces (no bigger than the size of a marble). In a large bowl, combine the broccoli, cottage cheese, Parmesan cheese, eggs, and spices. Stir until everything is well combined.

Scoop about 2 tablespoons of broccoli mixture into each cup. Lightly press broccoli mixture down with fingers in each muffin cup (this will help everything hold together when it comes out of the oven). Sprinkle each bite with 1 tablespoon of shredded mozzarella cheese (optional). Bake for 25-30 minutes, until lightly golden brown on top. Remove from the oven and enjoy warm!
