Simple Meatloaf Muffins

Great recipe for busy weeknights!

Ingredients

  • 1 lbs. beef, ground, free-range or grass-fed, organic
  • 2 egg, omega-3, cage-free, organic
  • 1/2 c. almond flour, organic
  • 1/2 tsp. garlic powder, organic
  • sea salt, unrefined, & fresh ground pepper, organic to taste
  • red pepper flakes, crushed, organic to taste

Directions

Preheat oven to 375ºF. Grease muffin pan. (Melted butter works well.) Mix all ingredients together just till combined, don't over mix. Form meat mixture into individual medium sized balls and drop into each muffin slot. Bake for 30 minutes.

This recipe is great because it's really easy and can be altered for any tastes (for example, I've made these with chili powder and topped them with salsa), AND they're a great thing to make in a bigger batch at the beginning of the week to have for quick lunches and dinners (and even snacks) throughout the week.
