Sunflower Beet Salad

This is a very tasty & satisfying salad for lunch or a side dish for dinner. I normally have it with a grilled chicken breast. Optional: Add about 40 almonds for an extra serving of protein per portion. It keeps well in the fridge for lunch the following day


  • 2 c. beets, fresh, organic
  • 2 c. carrot, fresh, organic
  • 1/2 lettuce, butter, organic
  • 2 oz. sunflower seeds, raw, unsalted, organic
  • 1 avocado, fresh, organic
  • 4 tsp. olive oil, extra virgin, unrefined and unfiltered, organic
  • 6 tsp. vinegar, apple cider, organic, unfiltered, raw
  • 1/4 clove garlic, fresh, organic


Dressing: Crush the garlic Mix it well with olive oil & vinegar

Salad: Coat lettuce with dressing, add the grated beet Cut avocado into bite size pieces & add Sprinkle sunflower seeds on top OPTIONAL: add the almonds & serve
