Delicious potato oven dish, that's easy to make! Goes perfectly with sunday roast or christmas dinner.
2 med. potatoes, white or gold, organic
1/2 onion, yellow, organic
3 parsley, fresh, organic
8 fl oz. chicken stock, organic, free-range
1 pinch sea salt, unrefined and pure
Preheat your oven to 250 C
Grease a small shallow roasting tin (or a cake tin will work as well)
Put a layer of potato slices on bottom of the tin.
Follow with a few slices of onion and some parsley.
Add a little bit of salt. (not too much, as stock is salty too)
Repeat and finish with potatoes on top.
Add stock to the dish. To get correct amount of stock: press on potatoes with your clean (!) flat hand . Then pour in stock until stock touches the palm of you hand. This should normally be about a half pint, when using these amounts of ingredients.
Place dish in the oven and cook for about 20-25 minutes.
