Salmon Veggie Scramble

Left over salmon tossed in with sauteed onions & mushrooms with chardonnay wilted spinach, roasted garlic spaghetti sauce and an egg - delicious single skillet meal.


  • 1 c. spinach, fresh, organic
  • 1/2 c. onion, any type, organic
  • 2/3 c. mushrooms, white, organic
  • 1 tsp. coconut oil, raw, extra-virgin, organic
  • 3 oz. salmon, fresh, wild-caught
  • 1 egg, omega-3, cage-free, organic
  • 1 tsp. cumin powder, organic
  • 1 tsp. lemon pepper seasoning, organic
  • 1/4 c. wine, white, organic
  • 1/3 c. tomato sauce, organic


Melt coconut oil over med/high heat, add onions and cumin, cover pan and saute 2 minutes; add mushrooms and lemon pepper, return lid and continue to saute for 2-3 more minutes ; crumble in cooked salmon add spinach and wine; cover and just as spinach wilts (within 15 seconds), add roasted onion spaghetti sauce and let simmer for 2 minutes; blend whisked egg into scramble, cover and cook for 1 minute.
