Bacon, shrimp and almond meal make this tangy soup a hearty stick-to-your-ribs supper. Number of servings depends on ranges - I only used 2 tomatoes as it is just me.
Chop and puree tomatoes and onions then pour into saucepan. Add garlic, sea salt, basil and bacon. Squeeze fresh lemon juice into mixture, adding to taste. Simmer for 15-20 minutes, adjusting seasoning to taste. Add shrimp, then almond meal to thicken (more or less, your choice). Turn up heat slightly to cook shrimp (or you can use already cooked shrimp). Don't overcook the shrimp. Soup is thick and hearty. Serve with diced avocados on top.
