Shrimp Cucumber Salad/Creamy Greek Yogurt Dressing by Vi

A nice creamy dressing and a healthy light lunch salad with 3 Proteins. Add more shrimp if you need more Proteins.

Ingredients

  • 1/4 c. Greek yogurt
  • 1 tsp. apple cider vinegar
  • 1 tsp. garlic
  • 2 tsp. onion
  • 1 tsp. sea salt
  • 1 dsh. black pepper
  • 1 dsh. red pepper flakes
  • 1/8 tsp. fresh thyme
  • 1 c. romaine lettuce
  • 1 cucumber
  • 2 oz. cooked shrimp
  • 1 oz. mild cheddar cheese

Directions

Mix together the yogurt, red pepper flakes, vinegar, garlic, onion, sea salt, black pepper, and thyme to make dressing. Serve over cut-up Romaine and Cucumber. Top with Shrimp and Cheese.
