Pumpkin Bars

Gluten-free recipe for pumpkin bars or muffins!


  • 1 c. pumpkin puree, 100% pure, canned, organic
  • 4 tbs. almond butter, organic, raw
  • 1 egg, omega-3, cage-free, organic
  • 1/2 tsp. baking soda, pure
  • 1/2 tsp. cinnamon, ground, organic
  • 2 tbs. spice, pumpkin pie, organic
  • 1/4 c. coconut sugar, organic
  • 1 tbs. molasses, organic
  • 1 1/2 oz. almond, sliced, organic, raw
  • 1/2 oz. sunflower seeds, raw, unsalted, organic
  • 1/4 c. flax seeds, organic


Preheat oven to 300ºF. Grease a muffin or cupcake tray with coconut oil.

Combine all ingredients in a large bowl and mix together. Place about 2 tablespoons of mix in each compartment (should fill 12 spots total). Garnish with pumpkin seeds (optional). Bake for 20 minutes or until toothpick can be pulled out clean. These muffins/bars go great with coffee or tea, and they're very filling. No added fat and still super moist. Add more nuts for additional protein.
