Gluten-free recipe for pumpkin bars or muffins!
Preheat oven to 300ºF. Grease a muffin or cupcake tray with coconut oil.
Combine all ingredients in a large bowl and mix together. Place about 2 tablespoons of mix in each compartment (should fill 12 spots total). Garnish with pumpkin seeds (optional). Bake for 20 minutes or until toothpick can be pulled out clean. These muffins/bars go great with coffee or tea, and they're very filling. No added fat and still super moist. Add more nuts for additional protein.
