Here is a great cookie for the season! Eat these in front of other people and see how many ask you "what kind of diet is THAT?!" You can just smile and say "The BEST one."
Preheat oven to 350ºF. Combine all ingredients in a large bowl. Drop by tablespoon onto a greased or parchment-lined baking sheet. Press down slightly with palm. Bake for 12-15 minutes or until golden brown. Should be about 12 cookies.
Using just 1 egg will give you a crispier cookie. If you want a softer chewier cookie, use 2 eggs.
Optional add-ins: Today I used Enjoy Life chocolate chips, raw pumpkin seeds, hulled hemp hearts and shredded coconut for my stir-ins. Hemp hearts have a slight greenish tinge to them which you can make out in the photos (if the color had you at all concerned!). You can also use raisins, chopped apples, sesame seeds, sunflower seeds, any dried fruit, seed or nut that you would like. Just remember that these add-ins might add a carb or protein to the count per cookie.
