My BD version of chicken stroganoff. Note: All ingredients should be organic if possible.
If using boneless chicken breasts, cut into strips - brown chicken strips in coconut oil along with minced garlic and onion. Add mushrooms and saute for a few minutes. Pour coconut milk over top, add seasonings and simmer until chicken is tender. Mix arrowroot with water and, while stirring, slowly add to thicken sauce. The sauce can be served over brown rice noodles, spaghetti squash, brown rice, etc.
In addition to 4 proteins per serving, there is about 1/2 carb.
