Cauliflower Fritters

A delicious way to prepare cauliflower!

Ingredients

  • 1/2 c. pecorino romano cheese
  • 1 c. brown rice flour
  • 2 egg
  • 2 clove garlic
  • sea salt & black pepper to taste
  • 4 c. cauliflower
  • 1/4 c. water
  • 2 tbs. coconut oil
  • 1/4 c. fresh parsley

Directions

Steam cauliflower and then chop up.

In a large bowl combine flour, crushed garlic, eggs, cheese, finely chopped parsley, hot water, and salt and pepper. Add cauliflower and mix.

Heat coconut oil in a skillet over medium heat. Use a 1/4 cup measuring cup to form fritters and add to the skillet. Cook until golden brown, turn and cook another few minutes. Remove and place on a paper towel covered plate. Add a little more oil to the pan and cook the remaining batter.
