Snickerdoodles!

Was looking around for something sweet to eat and found this recipe, it renewed my faith in flour-less baked goods. I can't even tell you how wonderful these are. They bake up soft and chewy and I'm pretty sure you can't eat just ONE! (either)

Ingredients

  • 1 1/2 c. almond meal, organic
  • 1 tbs. coconut flour, organic
  • 1 egg, omega-3, cage-free, organic
  • 1/4 c. honey, raw, unfiltered, organic
  • 1/4 c. coconut oil, raw, extra-virgin, organic
  • 1 tsp. vanilla extract, organic
  • 1/2 tsp. cinnamon, ground, organic
  • 1/2 tsp. nutmeg, organic
  • 1/2 tsp. baking soda, pure
  • 1/4 tsp. sea salt, unrefined and pure

Directions

Combine all the ingredients together in a bowl and mix well. Cover the cookie dough and place in the fridge to chill for one hour. Preheat oven to 350 degrees. Roll the cookies into small balls and coat in cinnamon. Use the bottom of a cup or jar to flatten them out. Place cookies on a parchment lined cookie sheet and bake for 10 minutes.
