Mixed Summer Salad

This is the way my mom taught me to make a basic salad. I discovered that kids will graze just as easilly on this as on crisps. Manners aside! It is a simple base for using any available greens as they come and has become a kind of staple that my kids can even make themselves.


  • 1 c. cucumber
  • 1 c. cherry tomato
  • 1 green bell pepper
  • 1/2 c. feta cheese
  • 1/2 c. olives
  • 1 c. white mushrooms
  • 1 tbs. sesame seeds
  • 4 c. lettuce
  • 1 med. Italian seasoning
  • 1 tsp. extra virgin olive oil


Mix the lemon, herbs and olive oil and cover the mushrooms with the mix. To prepare a fresh looking salad, make layers of the various ingredients and don't stir at all. Start with the leaves - remember to break lettuce leaves with your hands - cutting them with a knife causes them to go brown. Now sprinkle cucumber bits, peppers, and then the colourful stuff. The mushrooms can be kept out untill just before you serve - the whole mixture is emptied over the salad as a dressing. Last come the sesame seeds sprinkled over the top. Hope you enjoy! PS.
