A Salsa that is great for dipping or serving hot or cold over chicken, pork or fish.
In a small saucepan over medium heat cook raspberries and water until berries fall apart. Add apple, onion and red pepper continue cooking until pepper and onions have soften Stir in honey and chipotle pepper reduce heat and simmer on low 1 hour stirring occaisionally until liquids are absorbed. For a thinner salsa reduce cooking time by 15 min For a chunkier version cut apple onion and red pepper in bigger pieces Adjust chipotle pepper if too spicy or not spicy enough Enjoy
