Millet, Almond and Date Muffins

With two muffins per serving, this recipe is really satisfying for breakfast or snack. Millet and almond meal are great gluten-free replacements for wheat flour, and dates are a great natural way to replace sugar.

Ingredients

  • 1/2 c. millet flour
  • 1/2 c. almond meal
  • 1/2 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 1 pinch nutmeg
  • 2 tbs. cacao powder
  • 10 date
  • 6 oz. yogurt
  • 2 tbs. coconut oil
  • 2 lrg. egg

Directions

  • Preheat oven to 350 f and line a muffin pan with 8 muffin papers.
  • Mix first five dry ingredients in a bowl.
  • Mix dates and yogurt in a food processor, then add oil and eggs.
  • Add date mixture to dry ingredients and fold using a spatula.
  • Pour into cups using 1/4 cup measuring cup.
  • Bake for 20 minutes.
  • Let cool and enjoy :)
