Spelt Pancakes

I used to make these light and fluffy pancakes for my kids. I amended the ingredients to be BD-friendly, so now they aren't quite as light and fluffy, but they're so much healthier!


  • 1 egg, omega-3, cage-free, organic
  • 1 c. coconut milk, unsweetened, full-fat, organic, canned
  • 2 tbs. coconut oil, raw, extra-virgin, organic
  • 1 c. flour, spelt, whole-grain, organic
  • 1/2 tsp. sea salt, unrefined and pure
  • 2 tbs. baking powder, aluminum-free
  • 2 tbs. coconut sugar, organic


Combine egg, milk and oil. Add sifted dry ingredients. Beat until smooth. Bake on hot griddle. Makes 8-5 inch pancakes (give or take).
