I used to make these light and fluffy pancakes for my kids. I amended the ingredients to be BD-friendly, so now they aren't quite as light and fluffy, but they're so much healthier!
Combine egg, milk and oil. Add sifted dry ingredients. Beat until smooth. Bake on hot griddle. Makes 8 5-inch pancakes (give or take).
