Easy, light, a great complement for a number of meals.
Place each potato in the belly of a tablespoon, slice downwards until you hit the spoon. Do not chop straight through. (The spoon should prevent this) Starting from more than 1cm from the edge, slice a few times (3-4x) across the curve of the potato. Leave at least 1cm on the other side of the potato.
Drizzle over each potato lightly with olive oil. Season with salt and pepper and add rosemary leaves/twigs in the center of the potatoes.
Baked in the oven for about 20-30 minutes (alongside Lamb cutlets or Chicken kiev, for ex) until softened and golden brown. Temp 180C/ 356F (Fan assisted oven)
One tip: The skins of the potatoes will look wrinkled when ready and soft.
