Lamb With Mint Marinade

Delicious, light and easy to make every time!


  • 2 lamb, grass-fed, organic
  • 1 1/2 tsp. dijon mustard, organic
  • 2 med. shallots, fresh, organic
  • 1/2 c. mint, fresh, organic
  • 2 tbs. olive oil, extra virgin, unrefined and unfiltered, organic
  • sea salt, unrefined, & fresh ground pepper, organic to taste


In a food processor, add the shallots, olive oil, mint, mustard, salt and pepper. It is advised to put only 1/4 tsp of salt at a time. Taste for preference. Process ingredients until medium consistency.

Place lamb cutlets on an unbleached cookie sheet or directly unto a baking tin. Sprinkle a little salt on each side of the lamb. Distribute the marinade between the cutlets. Bake for about 20-25mins at 180C/ 356F (Fan assisted oven. You may need to adjust times for basic ovens). No need to turn over.

Serve with fresh salad and hedgehog new potatoes!
