Mexican Charro Beans

Mexican Charro Beans


  • 1 sea salt, unrefined, & fresh ground pepper, organic
  • 2 c. pinto beans, dry, organic
  • 6 pce. bacon, uncured, nitrate-free, organic, pastured
  • 2 clove garlic, fresh, organic
  • 4 med. tomatoes, plum, fresh, organic
  • 2 med. onion, any type, organic
  • 1 med. bell pepper, green, fresh, organic
  • 1/2 bch. cilantro, bunch, fresh, organic
  • 2 black pepper, ground, organic


1 Rinse and pick over beans. 2 Bring the beans to a boil in a large pot of water and cook over medium heat for 1½ to 2 hours until they tender but still firm. 3 Before the beans are done, fry the bacon in a large skillet until halfway cooked. 4 Add garlic, tomatoes, onions, and green pepper; continue cooking with bacon until the bacon crisp. 5 Add chopped cilantro and jalapenos; combine everything in one large pot. 6 Add salt and pepper to taste.
