Coconut Flapjacks

In the UK flapjacks are bars of buttery oaty yum-ness. I made these versions as a sweet treat.

  • 1 1/2 c. oats, whole, dry, organic
  • 1/4 c. coconut, unsweetened, organic
  • 1/4 c. oat bran, organic
  • 1/8 c. almonds, slivered, organic, raw
  • 1 tbs. butter, unsalted, organic, raw or unpasteurized, grass-fed/pastured
  • 3 tbs. coconut oil, raw, extra-virgin, organic
  • 2 tbs. maple syrup, pure, organic
  • 2 tbs. coconut sugar, organic

Take a large saucepan on a low heat and melt the butter and coconut oil together.

Add the maple syrup and the coconut sugar and keep stirring untill the grains have dissolved.

Remove from the head and add the rest of the dry ingredients, ( try to resist drinking the syrup it smells amazingggg!)

Stir all together untill it forms a stiff paste that should come away from the sides of the pan.

Lighty butter a baking tray and shape out a square to be cut into bars.

Bake at 180 for 20 mins or untill they are lightly golden

Remove and allow to cool slightly before cutting into bars, will keep in an air tight tin for a week, if they last that long!

You can melt some dark chocolate and drizzle over the top before cutting if you want to add an extra bit of naughtyness ;)
