Sweet Potato Popsicles

A great healthy snack for kids (and adults)!


  • 3 sweet potato
  • 1/2 c. canned coconut milk
  • 2 tbs. honey, raw
  • 1/2 tsp. cinnamon
  • 1 tbs. Athletic Greens


Preheat your oven to 350 degrees. Wash your sweet potatoes and cut in half. Place skin side down on a baking sheet and bake for 30 minutes or until fork tender. Remove from the oven and let cool. Scoop out the sweet potatoes and throw away the skin. In a blender, combine the sweet potatoes, coconut milk, honey and spices. Puree until smooth. Add more coconut milk if the mixture is too thick – you should be able to pour it. Pour into your popsicle mold and let freeze. Serve frozen and enjoy.
