Pasta Salad

Great for a picnic!

Ingredients

  • 2 c. quinoa, white, organic
  • 3 oz. cheese, feta, raw, grass-fed or pastured, organic
  • 12 oz. bell pepper, red, fresh, organic
  • 7 oz. olives, Kalamata, organic
  • 2 tsp. oregano, dried, organic
  • 1 tbs. olive oil, extra virgin, unrefined and unfiltered, organic
  • sea salt, unrefined, & fresh ground pepper, organic to taste

Directions

Boil pasta until al dente. In the meantime, dice peppers and halve olives. When the pasta has been drained, toss in olive oil and 2 tablespoons of reserved olive juice. Add in remaining ingredients and mix well. Chill for 30 minutes. Serve cold.
