I invented this recipe when I really wanted a healthy chocolate chip cookie, but ended with this instead. It's like a crumby cookie while it has a slight grainy texture and sweet natural flavor.
Adjust oven rack to middle position and preheat oven to 375 degrees. Line medium baking sheet with parchment paper.
In medium bowl, cream butter & sugar. Beat in egg and vanilla. In separate small bowl, whisk together flours, baking powder, and cinnamon. Fold flour mixture into butter mixture. Fold in chocolate chips and coconut using wooden spoon.
Equally divide dough into 10 fragments. Roll each piece into a ball using your palms. Place each ball onto baking sheet 2 inches apart. Bake for 9-14 min or until toothpick is inserted and comes out clean. Cool completely on wire rack. Serve.
