Hands down best healthy, gluten-free banana pancake recipe! And you probably already have these ingredients on hand.
In a bowl, mash the banana. Add the eggs, and whisk them together with the banana. Add cinnamon and vanilla, to taste. Mix very, very well so there aren't any big lumps.
Heat coconut oil in a skillet over medium heat. Drop about 1/4 cup of batter into the skillet for each pancake. Cook for 1 to 2 minutes on each side.
