My family loves these, I have to hide them in the freezer!
Preheat oven to 325ºF. Line a baking sheet with parchment paper.
In a food processor, grind oats into a fine flour. Move oats to a bowl, and add coarsely ground raw nuts (your favorite kind), almond flour, and baking soda. Stir to mix well.
In a small bowl, whisk together melted coconut oil, maple syrup, vanilla, and almond extract (optional) until emulsified. Pour over dry ingredients and mix well. If the dough seems too wet, add more almond flour.
Scoop generous tablespoon onto parchment lined baking sheet (should make about 20 cookies). With your finger, make a small well in the center of each cookie and fill with about 1/2 tablespoon of jam (any flavor will do). Bake for 12-18 minutes, watching carefully as these can burn easily. Let cool on parchment before removing to rack to cool completely.
