Broccoli and Cheddar Quiche with Brown Rice Crust

exactly what it sounds like a quiche flavored with broccoli and sharp cheddar in a crust of brown rice :) prep time is not including the time it takes to cook the rice

Ingredients

  • 2 c. rice, brown, organic
  • 1/4 c. cheddar cheese, mild, raw, organic
  • 5 egg, omega-3, cage-free, organic
  • 1 c. milk, full-fat, raw, grass-fed or pastured cows, organic
  • 2 c. broccoli, fresh, organic
  • 1 c. cheddar cheese, sharp, raw, organic
  • 4 green onion, fresh, organic
  • 1 pinch nutmeg, organic
  • sea salt, unrefined, & fresh ground pepper, organic to taste

Directions

1 Mix the rice, finely grated cheese and one egg in a bowl. Press the rice mixture into a pie plate, about 1/4 inch thick.

2 Bake in a preheated 450 degree F oven until the edges and bottom just start turning golden brown, about 5 to 7 minutes.

3Mix the remaining eggs, milk, broccoli, sharp cheddar cheese and green onions in a bowl and season with salt and pepper. Pour the egg mixture into the pie crust.

4Bake in a preheated 375 degree F oven until golden brown and set in the center, about 30 to 35 minutes.
