A homemade red enchilada sauce. Way better than canned, but I'm probably biased :)
Combine all ingredients in food processor. Puree until well mixed.
If you don't plan to use immediately, may place in freezer container and freeze. Will need to complete step 3 once you thaw. Heating time may increase on frozen sauce - whisking helps bring it back to an even consistency.
If plan on using: Place sauce in saucepan and heat over med-low heat approximately 5 minutes or until heated through.
